Tuscan Shrimp & Orzo Skillet

Ingredients

  • 450 g tail on, raw shrimp
  • 1 Tbsp olive oil
  • 250 g (1/2 pkg) raw orzo noodles
  • 500 ml chicken bone broth
  • 1/4 c. 10% cream
  • 3 c. spinach, chopped
  • 2 c. mushrooms, sliced
  • 1 c. onion, chopped
  • 1 c. celery, chopped
  • 6-8 sundried tomatoes (in oil), sliced
  • 2 cloves garlic, minced
  • 1.5 Tbsp basil paste
  • 1 Tbsp Italian seasoning
  • 1/4 tsp cayenne pepper (optional)
  • 2-3 Tbsp lemon juice
  • 1/2 c. shredded parmesan cheese
  • Salt & pepper

Directions

1. In a large skillet, over medium heat add some olive oil and fry the shrimp for ~1 min per side until mostly cooked. Remove from heat temporarily.
2. Add a bit more oil and fry the celery & onions until they begin to soften.
3. Add the mushrooms, garlic and a bit of salt & pepper. Fry until the mushrooms start to soften ~2-3 minutes.
4. Add the orzo, chicken broth, cream, sundried tomatoes, seasonings, and lemon juice. Bring to a simmer and cover until the orzo is mostly cooked through.
5. Add in the chopped spinach and shredded parmesan and mix throughout. Continue cooking until the spinach is wilted and the orzo is soft to eat.
