1. In a large skillet, over medium heat, add a bit of oil and fry the chicken until mostly cooked through. Remove temporarily.
2. Add a bit of oil to the pan and the gnocchi and fry until a little golden brown.
3. Add the bell pepper and red onion. Fry until soft.
4. Add in the mushrooms, cherry tomatoes, chicken bone broth, cream, basil, thyme, a bit of white wine vinegar, and some salt and pepper. Bring to a light simmer and cook for about 5 minutes to reduce some of the liquid. Taste & adjust for flavours.
5. Remove from heat and cover with some shredded parmesan, fresh cracked pepper, and a bit of extra fresh basil and thyme. Enjoy!
