1. Cook 1 cup of quinoa in 1.5 cups of water, small amount of oil and salt. Bring to a boil and let simmer for 12-15 minutes.
2. Roast or Air Fry cubed beets, with a bit of oil, salt and pepper.
3. Let the quinoa and beets cool while preparing other ingredients.
4. Combine the dressing ingredients in a small mason jar and shake well.
5. Combine the quinoa, beets, bell pepper, feta, and dressing in a large bowl.
