1. Make marinade/salad dressing in a small mason jar. Shake well to combine. Use half to marinate the chicken for 1+ hours.
2. Grill over medium heat for ~20 minutes or until chicken reaches an internal temperature of 165 degrees F.
3. When ready to assemble, in a medium bowl add the spring mix and the other half of the marinade/dressing. Massage lightly into the spring mix.
4. Plate with the spring mix, assorted veggies, chicken, dates, and the crumbled feta.
