Chicken Kofta Meatballs
Other Ingredients
1.Preheat the oven to 420 degrees F.
2. Add the quartered mini potatoes to a lined sheet pan. Drizzle with olive oil, lemon juice, salt, pepper, rosemary, and oregano. Transfer to the oven and bake for ~15 minutes. Remove the sheet pan from the oven and flip the potatoes, Add the feta cheese and cherry tomatoes. Return to the oven for another 15-20 minutes or until the potatoes are done to the desired level of crispiness.
3. Add the kofta meatball ingredients (except the ground chicken) to a food processor. Pulse until it looks like a fine grain. Add the mixture to the ground chicken. Form into ~16-20 equal-sized meatballs. Air fry until the internal temp reaches 165 degrees F.
4. Plate with the Tzatziki & roasted red pepper sauce on the bottom and on top add the spring mix, lemon feta potatoes, roasted tomatoes, and meatballs. Optionally drizzle over a bit of lemon juice. Enjoy!
