1. Preboil potatoes until they are just soft enough to pierce with a fork. Strain & chop into bite-sized pieces.
2. Preheat an oven to 400 degrees F.
3. On a lined baking sheet, evenly spread out the potatoes, carrots, and halved chicken breasts. Add the pesto throughout the sheet pan trying to cover as much of the food as possible. Then add the halved cherry tomatoes over-top.
4. Bake in the oven for ~25 minutes until the chicken reaches an internal temp of ~160 degrees F.
5. Remove the tray from the oven and set the oven to broil at 500 degrees F. Add the mozzarella cheese and return to oven for a few minutes until golden brown.
6. Let rest for 4-5 minutes before serving – add a bit of fresh basil (optional), balsamic vinegar, and some salt & pepper to serve!
