Kofta Meatballs
Other ingredients:
1. Add the kofta meatball ingredients (except the ground beef) to a food processor. Pulse until the pistachios and parsley are in a fine grain. Add the mixture to the ground beef. Form into ~12-16 equal-sized meatballs. Air fry until the internal temp reaches 155 degrees F.
2. Combine the minty yogurt sauce ingredients in a blender or food processor. Blend until smooth. Add a bit of water to thin if needed. Adjust flavours to preference.
3. Cook rice as per package directions. This dish is also delicious in a pita, so feel free to use that over rice for a quicker meal.
4. Plate with rice, the kofta meatballs, fresh veggies, and drizzle over the minty yogurt sauce. Enjoy!
