1. Preheat an oven to 400 degrees F.
2. Boil the potatoes until you can pierce them with a fork. When finished, add a bit of butter, milk, salt, and pepper and mash together until smooth.
3. Add the broccoli and butternut squash to a parchment paper-lined baking sheet. Drizzle with olive oil, salt, and pepper. Roast until golden brown, about 15-20 minutes for the broccoli and 25-30 minutes for the butternut squash.
4. Form equal-sized meatballs with the meat, panko, garlic powder, onion powder, salt, and pepper. Add them to a medium-hot fry pan until mostly cooked through.
5. In a small bowl add the sweet & sour sauce ingredients, and combine well.
6. Pour the sauce over the meatballs and let it simmer for about 5 mins.
7. Plate with mashed potatoes, roasted veggies, meatballs, and drizzle over a bit of the sauce!
