Sticky Ginger Salmon

Ingredients

  • 1 Large Filet Salmon or Steelhead Trout
  • 1c. uncooked basmati rice
  • 1 c. light coconut milk
  • 1 tsp sugar
  • 1 c. water
  • 2 green onions for garnish
  • sesame seeds for garnish

Sticky Ginger Sauce

  • 1/4 c. brown sugar
  • 2-3 Tbsp soy sauce
  • 1 Tbsp garlic, minced
  • 1 Tbsp fresh ginger, pureed or grated
  • 1 Tbsp sesame oil
  • Pinch of pepper

Directions

1. Preheat an oven to 400 degrees F.
2. In a small bowl combine the ingredients for the Sticky Ginger Sauce. Spread over the fish evenly.
3. Bake the fish until it reaches an internal temperature of 145-155 degrees F.
4. On a stovetop bring the rice, coconut milk, and water to a boil. Add a tsp of sugar and a pinch of salt. Let it boil until soft.
5. Plate with rice and the fish, garnished with green onion and sesame seeds.
6. This recipe goes great with roasted or steamed asparagus and/or a side salad!
