Spicy Chick Stir Fry

Ingredients

  • 1 package extra lean ground chicken breast
  • 2 c. bell peppers, chopped
  • 1 c. yellow onion, chopped
  • 2 c. green beans
  • 1 Tbsp each of garlic and ginger
  • 1 red thai chili pepper, diced fine
  • 1-2 Tbsp honey
  • 2 Tbsp slivered almonds
  • Salt & Pepper to taste
  • 3 c. cooked basmati rice
  • 1 tsp oil

Directions

1. In a large frying pan over medium heat, cook the ground chicken 80% through and remove temporarily.
2. Add the bell peppers, onions, and green beans. Add a bit of salt to pull some water out from the vegetables. Fry for around 5-10 minutes until vegetables are soft to eat.
3. Add chicken back to pan, with the ginger + garlic + chillies, honey, and cook for about 2-3 minutes.
4. Add almonds and salt/pepper to taste.
5. Serve over rice!
