1. In a skillet, fry up some chicken breast chunks until about 90% cooked through. Remove temporarily.
2. Add a bit of oil and fry up the celery, onions, and carrots until soft. Add the green pepper and garlic and fry for a few minutes.
3. Add the rice and seasonings, stir well, and then add in the chicken bone broth. Return the chicken in as well. Cover at a simmer until the rice is cooked, around 12-15 minutes.
4. Add in the spinach, slivered almonds, and raisins. Mix them in well and cook until the spinach is cooked down. Taste and adjust seasonings to preference. Enjoy!
