Rockin’ Moroccan Rice & Chick Skillet

Ingredients

  • 2-3 chicken breasts, bite-sized
  • 1 Tbsp olive oil
  • 1 c. uncooked basmati rice
  • 1 Jar (700 ml) chicken bone broth + water as needed
  • 1/2 c. carrots, chopped
  • 1/2 c. celery chopped,
  • 1/2 c. yellow onion, chopped
  • 1/2 c. green bell pepper, chopped
  • 2-3 c. spinach, chopped
  • 2 cloves garlic, minced
  • 1/2 c. raisins
  • 1/2 c. sliced almonds
  • 2 tsp cumin
  • 1 tsp turmeric
  • 1/2 tsp ground cinnamon
  • Pinch of dried red chilies
  • Salt & pepper

Directions

1. In a skillet, fry up some chicken breast chunks until about 90% cooked through. Remove temporarily.

2. Add a bit of oil and fry up the celery, onions, and carrots until soft. Add the green pepper and garlic and fry for a few minutes.

3. Add the rice and seasonings, stir well, and then add in the chicken bone broth. Return the chicken in as well. Cover at a simmer until the rice is cooked, around 12-15 minutes.

4. Add in the spinach, slivered almonds, and raisins. Mix them in well and cook until the spinach is cooked down. Taste and adjust seasonings to preference. Enjoy!
