1. Preheat the oven to 400 degrees. Slice one end of a garlic bulb and drizzle with olive oil and some salt. Cover in foil & roast in the oven for ~60 minutes. This should make a few tablespoons that you can use for the marinade.
2. Cook the pearl barley as per package directions ~ 45 minutes.
3. When you have the roasted garlic, combine the roasted garlic & honey marinade ingredients.
4. Cut the salmon or steelhead trout into bite-sized chunks. Add the marinade and mix well. Transfer to an air fryer and air fry for around 12-15 minutes or until golden brown and the internal temperature reads 145 degrees F.
5. Combine mayo and sriracha sauce for the mayo. Optionally add honey.
6. Plate with barley, the salmon bites, veggies, and give a drizzle of the sriracha mayo. Optionally garnish with sesame seeds and
some green onion. Enjoy!
