Red Curry Shrimp Nooda Bowl

Ingredients

  • 1/2 pkg (150 g) thin rice noodles
  • 16 oz. raw shrimp
  • 1 can coconut milk
  • 1 small jar (112 g) red curry paste
  • 2 Tbsp fish sauce
  • 1-2 limes
  • Fresh cilantro
  • Optional: thai green chillies
  • 1-2 Tbsp honey
  • 3 c. zucchini, sliced
  • 2 c. carrots, matchstick or grated
  • 2 c. bell peppers, thinly sliced
  • 1 c. yellow onion

Directions

1 Make the rice noodles as per package directions.

2. In a large fry pan, add a bit of olive oil and fry up the zucchini, carrots, bell peppers, and onions until they start to soften.

3. Stir in the shrimp and cook for around 1-2 minutes until they start to turn white.

4. Add in the coconut milk, curry paste, juice of 1 lime, and a bit of honey. Add the fish sauce, about 1 Tbsp and add more to preference. Fish sauce adds in lot of flavour!

5. If you like spicy, add the green chilies into the dish and stir around. If you are serving it for others who do not like heat, add them into your individual plate.

6. Add the cooked rice noodles into the dish or serve the curry over top. When serving, add some fresh cilantro and a lime wedge and enjoy!
