Pumpkin Pie French Toast

  • 4 slices Silver Hills Squirrely Bread
  • 4 whole eggs
  • 1/4 c. egg whites
  • 2 Tbsp, 2% milk
  • 1 tsp vanilla extract
  • 3-4 Tbsp pumpkin puree
  • 1/2-1 tsp pumpkin spice (desired amount)
  • Pinch of salt
  • Optional: top with a bit of whip cream or cool whip with a sprinkle of pumpkin spice
  • Serve with: regular or reduced sugar syrup

Directions

  1. In a large bowl combine the eggs, milk, vanilla, pumpkin puree, pumpkin pie spice and a pinch of salt. Stir very well to incorporate the pumpkin puree.
  2. Dip the bread in the pumpkin mixture and then transfer to a griddle or fry pan.
  3. Cook until golden brown on each side. Optionally top with some whip cream and a pinch of pumpkin pie spice and serve with either regular or reduced sugar syrup. Enjoy!
