Protein Brownies

Ingredients

  • 1.5 c. canned black beans, rinsed
  • 1 c. quick oats
  • 2 scoops whey protein powder (chocolate)
  • 2 Tbsp cocoa powder
  • 1/3 – 1/2 c. maple syrup
  • 1/4 – 1/2 c. almond milk or regular milk
  • 4 Tbsp coconut oil, heated to liquid
  • 2 tsp vanilla extract
  • 1 Tbsp baking powder
  • 1/4 tsp salt + pinch after baking
  • 3 Tbsp chocolate chips

Directions

  1. Preheat the oven to 350 degrees F.
  2. Add all ingredients, except for the choco chips, to a food processor and pulse until smooth. Add milk as needed until it forms a smooth consistency.
  3. Line the bottom of a square cake pan with parchment paper. Transfer the brownie mixture into the pan and spread out evenly.
  4. Top with choco chip and transfer to the oven.
  5. Bake in the oven for ~15 minutes. Remove from oven and sprinkle with sea salt.
  6. Enjoy! (I love these cold from the fridge!!)
