1. Slice the raw chicken breast down the middle, length-wise and then chop into 4 equal pieces for each breast. Marinate in the juice of a lime, some olive oil, paprika, garlic powder, and onion powder.
2. Combine the Peach Salsa ingredients and let sit until the rest of the ingredients are prepared.
3. In a large fry pan, over medium-high heat, add a bit of oil and the chicken breast pieces. Season with salt and pepper. Fry for around 4-5 minutes per side until golden brown and the internal temp is 165 degrees F. Let rest for around 3-5 mins before slicing.
4. Plate with a bed of greens, a bit of the peach salsa, top with the sliced chicken, more salsa, crunched up corn chips, goat feta, and a drizzle of the balsamic glaze. Enjoy!
