Peach Salsa Chicken Salad

Ingredients

  • 2-3 chicken breasts
  • Juice of 1 lime
  • 1 Tbsp olive oil
  • 1 Tbsp paprika
  • 1 tsp each of garlic and onion powder
  • 1-2 c. corn chips, broken up
  • 8-10 c. fresh greens
  • 1-2 c. micro greens
  • 1/4 c. goat feta cubes
  • 2 Tbsp Balsamic glaze/reduction

Peach Salsa

  • 4 peaches, peeled & chopped
  • 2 roma tomatoes, chopped
  • 1/4 c. fresh cilantro, chopped
  • 1 jalapeno, sliced (optional)
  • 1/8 yellow onion, diced fine
  • Zest of 1/2 lime
  • Juice of 1 lime
  • 1 tsp olive or avocado oil
  • 1 Tbsp sugar
  • Salt & pepper

Directions

1. Slice the raw chicken breast down the middle, length-wise and then chop into 4 equal pieces for each breast. Marinate in the juice of a lime, some olive oil, paprika, garlic powder, and onion powder.

2. Combine the Peach Salsa ingredients and let sit until the rest of the ingredients are prepared.

3. In a large fry pan, over medium-high heat, add a bit of oil and the chicken breast pieces. Season with salt and pepper. Fry for around 4-5 minutes per side until golden brown and the internal temp is 165 degrees F. Let rest for around 3-5 mins before slicing.

4. Plate with a bed of greens, a bit of the peach salsa, top with the sliced chicken, more salsa, crunched up corn chips, goat feta, and a drizzle of the balsamic glaze. Enjoy!
