Paleo Apple Pork Tenderloin

Ingredients

  • 2 pork tenderloins
  • 1 granny smith apple, peeled and thinly sliced
  • 1/2 yellow onion, diced
  • 4 Tbsp crushed or sliced almonds
  • 1/4 c. raisins

Pour over sauce

  • 2 Tbsp apple juice
  • 1 Tbsp garlic, minced
  • 1 Tbsp olive oil
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp grainy Dijon mustard
  • Fresh or dried rosemary & thyme
  • Salt & pepper

Directions

1. Preheat an oven to 400 degrees F.
2. Slice the pork tenderloin enough to fit in the sliced apple wedgets, spaced evenly apart.
3. In a small mason jar combine the pour over sauce ingredients and shake well.
4. Pour over the sauce and keep a bit to do another pour over at the end.
5. Bake in the oven until the pork reaches an internal temp of 160 degrees F.
6. Lightly toast the almonds in a dry pan. Add the raisins just long enough to warm them after. Make sure to not burn the almonds!
7. Sprinkle the almonds and raisins over the pork tenderloins!
