1. In a large zip lock bag add the chicken, lime zest, lime juice, olive oil, garlic, 1-2 handfuls of mint leaves, and salt/pepper. These also make great skewers, so you can alternatively cut them into cubes to marinate and then transfer to skewers prior to grilling. Marinate for at least one hour.
2. Grill over medium heat until internal temp reaches 165 degrees F.
3. This dish goes great with foil wrapped and barbequed potatoes, carrots, and onions!
