1. Preheat an oven to 400 degrees F.
2. Line a sheet pan with parchment paper and add the halved mini potatoes, a bit of oil, salt and pepper. Bake in the oven for ~15-20 minutes until the potatoes are starting to get brown . Remove from oven and shuffle around.
3. In a small mason jar or bowl, combine the dressing ingredients and mix well.
4. Add the salmon or trout and the asparagus to the pan, spread the dressing around but make sure to cover the fish completely. Return the pan to the oven and cook until
the fish reaches an internal temp of 140-145 degrees F.
5. Remove from oven, rest for 2-3 mins, then serve!
