Miso Maple Salmon Sheet Pan

Ingredients

  • 16-20 oz. filet of salmon or steelhead trout,
    cut into 4 smaller filets
  • 2 Tbsp sesame seeds
  • 4-6 small sweet potatoes, peeled & cubed
  • 3-4 c. broccolini or broccoli florets
  • 1 Tbsp olive oil
  • Salt & pepper

Miso Maple Dressing

  • 2 Tbsp miso paste
  • 2 Tbsp maple syrup
  • 1 Tbsp olive oil
  • 1 Tbsp rice wine vinegar
  • 1-2 tsp sesame oil

Directions

1. Preheat an oven to 400 degrees F.
2. Line a sheet pan with parchment paper and add the sweet potatoes, a bit of oil, salt and pepper. Bake in the oven for ~10 minutes until the potatoes are starting to get brown. Remove from oven and flip.
3. In a small mason jar or bowl, combine the dressing ingredients and mix well.
4. Sprinkle the sesame seeds over the fish and add to the sheet pan with the broccolini, spread the dressing around but make sure to cover the fish completely. Return the pan to the oven and cook until the fish reaches an internal temp of 145 degrees F, around 20 minutes.
5. Remove from oven, rest for 2-3 mins, then serve!
