Ingredients

Simple Beef Meatballs

  • 1 pkg 500 g extra lean ground beef
  • 1/4 c. panko breadcrumbs
  • 1 egg, whisked
  • 1/2 tsp each of garlic powder, onion powder
  • Salt & pepper

Mashy Potatoes

  • 5 medium new potatoes, peeled
  • 1 Tbsp butter + 1/4 c. Tbsp milk
  • Salt & Pepper

Others

  • 3-4 c. beets, peeled & sliced
  • 3-4 c. carrots, peeled & sliced
  • 1-2 Tbsp olive oil
  • Salt & pepper
  • Optional garnish: green onions

Miso Sauce

  • 2 Tbsp miso
  • 1 Tbsp rice wine vinegar
  • 1 Tbsp lime juice
  • 1 Tbsp soy sauce
  • 1 Tbsp honey
  • 1 tsp sesame oil

Directions

1. Preheat an oven to 400 degrees F.

2. Boil the potatoes until you can pierce them with a fork. When finished, add a bit of butter, milk, salt, and pepper and mash together until smooth. For creamy & smooth mashed potatoes use an electric hand mixer!

3. Add the beets and carrots (or any other desired veggies) to a parchment paper-lined baking sheet. Drizzle with olive oil, salt, and pepper. Roast until golden brown, about 20-30 minutes.

4. Form equal-sized meatballs and add them to a medium-hot fry pan. Fry them, moving often, until mostly cooked through.

5. In a small bowl combine the miso sauce ingredients until smooth and uniform.

6. Pour the sauce over the meatballs for enough time to get warm and add flavour to the meatballs- you don’t want the sauce to evaporate.

7. Plate with mashed potatoes, roasted veggies, meatballs, and drizzle over a bit of the remaining sauce! Optionally garnish with some green onions.
