1. Prepare the rice as per package directions.
2. Cut a larger salmon or steelhead trout filet into 4 equal-sized pieces. Sprinkle over a bit of the mesquite seasoning to coat each piece of salmon. Lightly drizzle with olive oil. Transfer to an air fryer and fry for ~15 minutes or until it reaches an internal temp of 145 degrees F.
3. In a condiment container, combine the mayo, a bit of the left over remaining mesquite seasoning (add small amounts until desired taste). Thin with a small amount of water. Shake well.
4. Plate with rice, a chunk of salmon, veggies, and a drizzle of the mesquite mayo! Enjoy.
