Maple Balsamic Chicken Salad

Ingredients

  • 4 oz. rotisserie chicken, breast meat
  • 1/3 c. cooked rice or rice/quinoa mix
  • 2-3 c. spring mix or red leaf lettuce
  • 1/3 c. each of carrot, bell pepper, and cucumbers
  • 4-5 cherry tomatoes, halved
  • 1 Tbsp feta cheese
  • 1-2 Medjool dates, chopped

Maple Balsamic Dressing

  • 1 Tbsp balsamic vinegar
  • 1 Tbsp maple syrup
  • 1-2 Tbsp olive oil
  • Salt & pepper

Directions

1. Combine all salad ingredients in a bowl.
2. Mix together the dressing ingredients in a small mason jar. Make a larger serving and use for future meals too!
3. Drizzle over some dressing and enjoy!
