1. Preheat an oven to 400 degrees F.
2. Whisk the egg in a small bowl.
3. In a separate bowl or plate combine panko, coconut, parsley, garlic powder, and season with salt & pepper.
4. Cut the fish fillets in strips. First, dip the strips in the eggs, and then roll in the breading until evenly coated. Transfer to a baking sheet lined with parchment paper. Lightly drizzle olive oil over top. Bake for ~8-10 minutes and before flipping and baking for another 8-10 minutes.
5. In a small bowl combine the dressing ingredients and mix well.
6. In a large bowl combine the coleslaw mixture, apple slices, and the coleslaw dressing.
7. Assemble the tacos with the fish, coleslaw dressing, and an extra squeeze of the remaining lemon wedges if desired.
