1. In a small mason jar, combine the lemon grass marinade. Use 1/2-3/4 of the mixture and marinate the chicken cubes for 1+ hrs. Use the remaining amount to drizzle over the noodles in each bowl when plating.
2. Grill the chicken on skewers or air fry until the chicken cubes reach an internal temp of 165 degrees F.
3. Cook the vermicelli noodles as per package directions.
4. Plate with noodles, a drizzle of the lemon grass sauce, add in the chicken, fresh veggies, and top with cilantro, crushed peanuts, and a drizzle of chili oil (optional) or Sriracha sauce (optional). Serve with a lime wedge!
