Garlicky Greek Chicken

  • 2-3 chicken breasts, cubed
  • 1/4 c. red wine vinegar
  • 1/4 c. olive oil
  • 1.5 Tbsp minced garlic
  • 2 Tbsp dried oregano
  • Salt & pepper

Other ingredients

  • 3-4 mini pita/naan breads per serving
  • 2-3 c. sweet potatoes, peeled & cubed
  • 2 c. cucumbers, sliced
  • 2 c. bell peppers, sliced
  • 1-2 c. cherry tomatoes, halved
  • 4 Tbsp dill pickles, diced
  • 4 Tbsp feta cheese, crumbled
  • Optional: olives, pitted & sliced
  • Optional: pinch of red chili flakes

Homemade Hummus

  • 1 can chickpeas
  • 3 Tbsp Tahini (stirred well)
  • 1 Tbsp olive oil
  • 1.5 Tbsp lemon juice
  • 1 clove garlic
  • Sprinkle of cumin
  • Salt
  • 1/4 c. cold water

Directions

1.Combine the chicken marinade ingredients and marinate the chicken cubes for at least 1 hour. Cook the chicken on the grill or air fry until they reach an internal temp of about 165 degrees F.
2. Preheat the oven to 400 degrees F. Roast the sweet potatoes, with a bit of olive oil until golden brown. Sprinkle with salt.
3. Rinse and drain the chickpeas. Bring to a boil for ~10-15 mins until soft. Combine the hummus ingredients in a food process and blend until smooth, adding water as needed. Taste and adjust for flavours!
4. Plate with the hummus on the bottom and the chicken, roasted sweet potatoes, veggies, feta, pickles, olives, and mini pitas on top. Enjoy!
