High Pro Pasta Bake

Ingredients

  • 400-500 g ground chicken breast
  • 1 Tbsp olive oil
  • 1 pkg (227 g) red lentil & brown rice penne
  • 1/2 red onion, diced
  • 1/2 c. celery, diced
  • 1/2 c. carrots, peeled diced
  • 2 cloves garlic
  • 1/2 c. red wine
  • 1 large container cherry tomatoes
  • 1/4 c. 10% cream
  • 8-10 fresh basil leaves
  • 1-2 c. zucchini, chopped
  • 1-2 c. bell pepper, chopped
  • 1-2 Tbsp white balsamic vinegar
  • 1 tsp sugar or honey
  • Salt & pepper
  • 3/4 -1 c. skim Mozzarella cheese, shredded
  • Optional: parsley for garnish

Directions

1. Preheat an oven to 400 degrees F.

2. In a cast iron, fry the ground chicken until it browns and is mostly cooked through. Remove temporarily.

3. Add some oil, celery, onion, carrots, and season with salt and pepper. Cook until the veggies just start to soften. Add the red wine and cook until it reduces to a quarter.

4. Add in the tomatoes, garlic, and quarter cup of water.

5. Use an immersion blender to blend the sauce to a puree. Then add in the cream, basil, a bit of vinegar and honey/sugar, with some salt & pepper. When you are happy with the flavours add back in the chicken and the fresh chopped zucchini & peppers.

6. Bring a pot of salted water to a boil and cook the penne noodles for half the time listed on the package ~ 4-5 mins.

7. Transfer the noodles and 1/2 – 1 c. of the salted pasta water to the sauce. Mix well, top with the shredded Mozzarella and transfer to the oven.

8. Bake for ~15-20 minutes or until the cheese is golden brown on top. Remove and let rest for a few mins. Optionally

top with some fresh parsley. Enjoy!
