Ingredients

  • 4-6 c. spring mix
  • 1.5 c. cooked basmati rice
  • 1 c. cucumber, sliced
  • 1/2 bell pepper, sliced
  • 6 oz. cooked chicken breast meat, cubed
  • 2 hard boiled eggs, sliced
  • 2 Tbsp Dried Cranberries
  • 2Tbsp Pecan Pieces

Poppyseed Dressing

  • 1 Tbsp oil
  • 1 Tbsp white vinegar
  • 1/2 Tbsp sugar
  • 1/2 tsp. each of poppy seeds, salt and mustard powder
  • 1/4 tsp. onion powder
    *Alternatively, look for a store-bought poppy seed
    dressing in the produce aisle

Directions

1. Combine all ingredients in a large salad bowl.
2. Make poppy seed dressing or use store bought, add to salad and mix well.
