Healthy Taquito Lasagna

Recipe Makes 8 Servings. Each Serving Is:










  • 12 small corn tortillas
  • 1 rotisserie chicken, chopped
  • 1 c. (250 g) light cream cheese (at room temp)
  • 1.5 c. medium salsa
  • 2 c. spinach, chopped
  • 1 bell pepper, chopped
  • 1/2 red onion, diced
  • 1-2 c. shredded cheddar cheese
  • 2 Tbsp chili powder
  • 1 tsp each of garlic powder & cumin

Optional Toppings

  • Additional salsa
  • Light or regular sour cream
  • Diced tomatoes
  • Avocado or guacamole


1. Preheat an oven to 400 degrees F.
2. In a large mixing bowl combine the cream cheese and salsa together. Make sure the cream cheese does not have any large chunks.
3. Add the chicken and spices and give a thorough mix.
4. Add in the veggies and combine evenly.
5. Layer with chicken mixture, corn tortillas, chicken mixture, cheese, corn tortillas, chicken mixture, and cheese for 2 layers. If reducing carbs inthe dish just use one layer or tortillas.
6. Bake for ~35-40 minutes until the cheese on top is lightly browned and the corn tortillas are soft to eat.
7. Add any additional toppings and serve, or transfer to containers for meal prep!
