1. Cube the chicken breasts into equal-sized pieces. Combine in a large bowl with the zest and juice of a lemon, olive oil, garlic, oregano, cumin, chili flakes, salt and pepper. Marinate for at least 30-60 mins.
2. Slice the mini potatoes in half. Drizzle with olive oil, salt, and pepper. Air fry (20-25 mins) or bake (30-40 mins) in the oven until golden brown.
3. Grate the cucumber and squeeze to drain out excess liquid. Combine the Tzatziki ingredients in a bowl and mix well. Adjust for flavours as desired.
4. Bring a large fry pan to medium-high heat and fry up the marinated chicken until golden brown and 160-165 degrees F.
5. Plate by layering a “river” of Tzatziki, and add the roasted potatoes, Greek chicken, fresh veggies (lettuce & cherry tomatoes), feta, olives (optional), and some fresh dill. For some extra carbs, feel free to add in a bit of pita bread!
