1. Bring a pot of salted water to a boil and add the potatoes. Boil for ~20-25 minutes until soft to mash.
2. Mash the potatoes with a small amount of butter. Add the whisked egg and mix until the mash is smooth. Let cool for about 5 minutes so it does not burn when handling.
3. Add 1 cup of flour and 1/2 tsp salt to a clean surface, fold in the potatoes, and knead until it forms a nice dough. Add more flour as needed. Separate the dough into 4 sections. Roll each section of dough out to cut small pieces that can then be boiled.
4. Bring a large pot of salted water to a boil and cook about half the gnocchi until they float to the top of the water. Remove and add in the next batch.
5. In a large frying pan over medium heat, fry the Italian sausage until golden brown.
6. Add the gnocchi, peas, and spinach and cook for a few minutes until the gnocchi starts to get some good crispiness.
7. Add the fresh thyme, honey, vinegar, and salt/pepper as needed.
