Garam Masala Chicken Skewers

Ingredients
3-4 chicken breasts, cubed
1 green bell pepper, chopped
1 red onion, chopped
1 bunch fresh cilantro
Salt & pepper
Garam Masala Marinade
1 c. 0% plain Greek yogurt
1/4 c. fresh chopped cilantro
2 Tbsp olive oil
Bit of lemon zest + 1 Tbsp lemon juice
2 cloves garlic, minced
1/2 Tbsp garam masala
Salt & pepper
Directions
In a bowl, combine the chicken marinade ingredients and mix well. Add the cubed chicken breast chunks. Marinade for 2-3 hours or longer.
Add the chicken, green peppers, and red onion chunks to a skewer. You should be able to make around 8-10 skewers.
Grill over medium heat, turning often, until the chicken reaches an internal temp of 165 degrees F.
Top the chicken skewers with a bit of fresh chopped cilantro and some salt & pepper.
We paired these chicken skewers with some Tzatziki, mini naan breads, and some Kalamata olives. Enjoy!
