Garam Masala Chicken Skewers

Ingredients

  • 3-4 chicken breasts, cubed
  • 1 green bell pepper, chopped
  • 1 red onion, chopped
  • 1 bunch fresh cilantro
  • Salt & pepper

Garam Masala Marinade

  • 1 c. 0% plain Greek yogurt
  • 1/4 c. fresh chopped cilantro
  • 2 Tbsp olive oil
  • Bit of lemon zest + 1 Tbsp lemon juice
  • 2 cloves garlic, minced
  • 1/2 Tbsp garam masala
  • Salt & pepper

Directions

  1. In a bowl, combine the chicken marinade ingredients and mix well. Add the cubed chicken breast chunks. Marinade for 2-3 hours or longer.
  2. Add the chicken, green peppers, and red onion chunks to a skewer. You should be able to make around 8-10 skewers.
  3. Grill over medium heat, turning often, until the chicken reaches an internal temp of 165 degrees F.
  4. Top the chicken skewers with a bit of fresh chopped cilantro and some salt & pepper.
  5. We paired these chicken skewers with some Tzatziki, mini naan breads, and some Kalamata olives. Enjoy!
