1. Cook rice as per package directions, aim for around 3/4 – 1 c. per bowl when serving.
2. In a small bowl or mason jar, combine the Dijon marinade & shake or mix well.
3. Cut the salmon or trout into bite sized chunks and mix in about 3/4 of the marinade. Transfer to an air fryer and cook on high for around 12-15 minutes, or until the internal temperature reaches 145 degrees F.
4. While the salmon is in the air fryer, add the remaining 1/4 of the marinade to the cabbage/brussels sprouts and let it break down/soften them and infuse some flavour!
5. Plate with rice, veggies, and the salmon/trout bites! Enjoy.
