Ingredients

  • 3-4 fillets (~6 oz) salmon or steelhead trout
  • 1 lbs mini yellow potatoes, halved or quartered
  • 3 c. broccoli, bite sized
  • 2 c. carrots, chopped
  • 1-2 Tbsp olive oil
  • Salt & pepper
  • Fresh cilantro to garnish

Dat Sweet Curry Marinade/Sauce

  • 3 Tbsp maple syrup
  • 1 Tbsp olive oil
  • 1 Tbsp grainy Dijon mustard
  • 1 Tbsp apple cider vinegar
  • 1/2 Tbsp curry powder
  • 1 tsp. minced garlic
  • 1 tsp. chilli powder
  • 1/4 tsp. each of coriander, salt, and pepper

Directions

1. Preheat the oven to 400 degrees F.
2. On a parchment lined baking sheet, add the potatoes and carrots with a little drizzle of olive oil and a pinch of salt and pepper. Roast in the oven for around 20-25 minutes before adding the salmon.
3. In a small mason jar, combine the marinade/sauce ingredients and stir/shake well to combine.
4. Remove the sheet pan and add in the salmon or trout and the broccoli florets. Drizzle the sauce over the salmon first and the remainder over all of the veggies. Return to the oven until the salmon/trout reaches a minimum internal temp of 145 degrees F.
5. Optionally garnish with some chopped fresh cilantro & enjoy!
