1. In a small bowl or jar combine marinade ingredients.
2. In a large bowl or zip lock bag, combine the cubed uncooked chicken breast and 1/2 to 3/4 of the marinade. Let it marinate for 30 + minutes up to 24 hours. Then transfer cubes to skewers to grill.
3. Grill on medium heat until chicken reaches an internal temperature of 165 degrees F.
4. Mix the remaining marinade with the half fat mayo to create Dat Sweet Curry Mayo for a topping.
5. Assemble bowls with rice, veggies, chicken, and drizzle the mayo.
