Creamy Apple Quinoa Bowl

Ingredients

  • 3-4 skinless chicken breasts
  • 1 c. uncooked quinoa
  • 1-2 c. vegetable or chicken broth
  • 3/4 – 1 c. each: bell pepper, matchstick
  • carrots, cucumber, spinach, and broccoli
  • ½ c. feta cheese
  • 1 pink lady apple, sliced
  • 1/4 c. pecans

Creamy Apple Dressing

  • ¼ c. half fat mayo
  • ¼ c. 0% plain Greek yogurt
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp apple juice
  • 1 Tbsp honey
  • 1 Tbsp Dijon mustard
  • ¼ tsp garlic powder
  • Salt & pepper to taste

Directions

1. Preheat oven to 400 degrees F.
2. Fry the chicken breasts with your desired seasoning or use a rotisserie chicken.
3. In a small saucepan/pot cook quinoa with vegetable or chicken broth according to package instructions.
4. In a small bowl combine all of the Creamy Apple Dressing ingredients and transfer to a condiment container.
5. While the chicken and quinoa are cooking prepare all the veggies.
6. Assemble bowls with the quinoa, chicken, veggies, pecans, feta, and the dressing.
