1. Preheat oven to 400 degrees F.
2. Fry the chicken breasts with your desired seasoning or use a rotisserie chicken.
3. In a small saucepan/pot cook quinoa with vegetable or chicken broth according to package instructions.
4. In a small bowl combine all of the Creamy Apple Dressing ingredients and transfer to a condiment container.
5. While the chicken and quinoa are cooking prepare all the veggies.
6. Assemble bowls with the quinoa, chicken, veggies, pecans, feta, and the dressing.
