1. If cooking the chicken, add desired seasoning and grill/roast until the chicken reaches an internal temp of 165 degrees F. Let rest for 5-10 minutes and chop. We grilled a cob of corn for this dish with a bit of oil & salt as well.
2. Preheat an oven to 400 degrees F. On a lined baking sheet add the chopped bread, fresh parsley, salt & pepper. Bake in the oven for ~5-10 minutes moving the bread around periodically making sure to not burn the bread.
3. Add the lime vinaigrette ingredients to a small mason jar and shake to combine.
4. Assemble the salad with lettuce, spinach, beans, corn, feta cheese, dates, croutons, and pour in the lime vinaigrette slowly to the desired amount (will only need about half and save the rest!
