Citrus Couscous Salad Bowl

Ingredients

  • 3 chicken breasts, cubed
  • 1 c. uncooked couscous
  • 1 tsp olive oil
  • 8 c. spring mix
  • 1 cucumber, peeled and chopped
  • 3 Tbsp fresh parsley, diced
  • 3 Tbsp fresh mint leaves, diced
  • 1 navel orange, skin removed and chopped
  • 1/2 c. feta cheese

Citrus Dressing

  • 1/4 c. olive oil
  • 2 Tbsp white wine vinegar
  • Zest of half a navel orange
  • 2 Tbsp each of fresh lemon and orange juice
  • 2 Tbsp honey
  • 1 Tbsp dijon mustard
  • 1 tsp garlic, minced
  • Salt & pepper

Directions

1. Combine the dressing ingredients in a mason jar and shake to mix well. Use half the dressing as a marinade for the chicken cubes and save the rest for pouring over the salad later. Let the chicken marinate for at least 30 minutes.

2. Grill the chicken skewers over medium heat until they reach a minimum internal temp of 160-165 degrees and let rest for 5 mins before serving.

3. Prepare the couscous as per package directions, and let cool completely.

4. Plate with the veggies, herbs, orange slices, couscous, feta cheese, chicken skewers, and pour over the dressing with your desired amount!
