1. Cook the rice as per package directions.
2. In a large pan over medium heat, fry the ground beef until mostly cooked through. Combine the garlic, ginger, soy sauce, honey, lime juice, and sesame oil in a small bowl or jar. Combine well and add to the beef. Let the beef fry in the sauce for 2-3 minutes and remove from heat.
3. In the same pan add the Brussels sprouts and sautee for around 3-4 minutes until they soften. Add the cabbage and carrots and continue to saute until soft to eat.
4. Combine the chipotle mayo ingredients in a bowl or a blender. Combine until smooth.
5. Plate with rice, veggies, and beef, top with the mayo and garnish with a lime wedge, sesame seeds, and green onions!
