Chicky Fajitas

1. Slice the chicken breasts in half (length-wise) for quicker frying. Combine the marinade ingredients and add it to a large bowl with the chicken to marinate for 30+ mins.
2. Preheat an oven to 350 degrees if you plan to warm the tortillas.
3. Add a bit of olive oil to a fry pan and fry the chicken breasts until they are golden brown and have reached a minimum internal temp of 165 degrees F. Let rest for ~5 mins.
4. Bring a pot of water to a boil and steam the corn for ~5 mins or until starting to soften. Cut the corn from the cob.
5. In the same fry pan that you used for the chicken, add a bit of olive oil and fry up the onions, peppers, and fresh corn.
6. Optionally warm the tortillas in the oven for 10-15 minutes by wrapping a stack of 3-4 in tinfoil.
7. Assemble the fajitas with chicken, veggies, cheese, and desired toppings. Enjoy!
