Ingredients

  • 2-3 chicken breasts. sliced down the middle for quicker frying
  • 3 bell peppers, sliced thin
  • 1 white onion, sliced thin
  • 2 cobs corn, steamed & cut off cob or 1 c. frozen kernel corn
  • 1 c. cheddar cheese, shredded
  • 4 large flour tortillas
  • Optional toppings: salsa, sour cream, pickled red onions, pickled jalapenos, hot sauce, lime wedges, fresh cilantro

Fajita Chicken Marinade

  • Juice of 1 lime
  • 2 Tbsp olive oil
  • 1 Tbsp chili powder
  • 1/2 Tbsp paprika
  • 1/2 tsp each of cumin, garlic powder, and onion powder
  • Salt & pepper

Directions

1. Slice the chicken breasts in half (length-wise) for quicker frying. Combine the marinade ingredients and add it to a large bowl with the chicken to marinate for 30+ mins.

2. Preheat an oven to 350 degrees if you plan to warm the tortillas.

3. Add a bit of olive oil to a fry pan and fry the chicken breasts until they are golden brown and have reached a minimum internal temp of 165 degrees F. Let rest for ~5 mins.

4. Bring a pot of water to a boil and steam the corn for ~5 mins or until starting to soften. Cut the corn from the cob.

5. In the same fry pan that you used for the chicken, add a bit of olive oil and fry up the onions, peppers, and fresh corn.

6. Optionally warm the tortillas in the oven for 10-15 minutes by wrapping a stack of 3-4 in tinfoil.

7. Assemble the fajitas with chicken, veggies, cheese, and desired toppings. Enjoy!
