1. Preheat oven to 420 degrees F.
2. Season the chicken with salt and pepper.
3. In a cast-iron pan, over medium heat, add olive oil and the chicken breast. Cook until both sides have a nice brown covering and are about 70% cooked through. Remove temporarily.
4. Use ~100 ml of the bone broth and add the Tbsp of corn starch. Mix it together to create the slurry.
5. Add all ingredients, except the mozzarella cheese.
5. Transfer the cast iron to the oven and bake uncovered for around 30 minutes.
6. At about 30 minutes top the dish with the mozzarella cheese and bake until golden brown, around 10 more minutes.
