1. Bring 1 cup of apple cider vinegar to a light simmer. Add in the sugar and salt and stir until dissolved. Pour the liquid over a mason jar filled with sliced red onion. Top with water to cover the onions fully. Give it a shake to ensure the water and vinegar is mixed evenly. Let it pickle for 30+ minutes or even overnight.
2. Slice the steak into thin pieces and add to a large bowl with the juice of 1/2 a lime, some olive oil, and the Cajun seasoning. Let marinate for around 30 minutes if able.
3. Prepare any of the desired toppings like shredded cheese, chopped veggies, etc.
4. Add the zest and juice of half a lime to the sour cream and stir to mix in.
5. In a large bowl, combine the masa flour with water as per package directions. Form into equal sized tortillas with a press or roller and fry on a dry pan or pancake griddle until each side is slightly golden and puffy. This should make around 10-12 small tortllas. Keep warm under a dish towel.
6. Add a bit of oil to a medium-high heat pan and fry the steak until golden brown and cooked to desired temp. Thinly sliced
steak will cook fairly quickly.
7. Assemble the tacos with desired toppings. Enjoy!
