1. Prepare the rice as per package directions.
2. Take your time to mince the chicken breast very fine (turns out better than ground chicken, but use that to save time if needed).
3. In a large pan with a bit of olive oil, fry the chicken breast until mostly cooked through. Add in the zucchini, mushrooms, and bell pepper and fry together for about 2-3 minutes.
4. In a small bowl or mason jar, combine the real good Asian sauce ingredients and add to the fry pan. Reduce the heat and let simmer until the rice is cooked.
5. Plate with rice, the real good Asian chicken filling, the lettuce, and cucumbers. Add in some sushi ginger (optional, but recommended) and sprinkle on some fresh green onions and a sprinkle of sesame seeds.
