Apple Pie Protein Muffins

Ingredients

Dry Ingredients:

  • 2 c. oat flour
  • 1/2 c. vanilla whey protein
  • 1/2 Tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 Tbsp cinnamon
  • 6 Medjool dates, pitted and chopped
  • 2 granny smith apples, peeled and grated

Wet Ingredients:

  • 1/2 c. maple syrup
  • 1/4 c. olive or avocado oil
  • 1 c. fairlife 2% milk
  • 1 whole egg, whisked
  • 1-2 tsp vanilla extract

Directions

1. Preheat an oven to 400 degrees F.
2. Combine all dry ingredients in a large mixing bowl.
3. Combine all wet ingredients in a small or medium mixing bowl.
4. Slowly combine wet ingredients into the dry ingredients, mixing well.
5. Fill into a lightly oil sprayed silicone muffin tin, bake for ~20 minutes.
