1.Bring a small skillet to medium heat. Add 2 Tbsp of brown sugar and a bit of water to the pan and let it form a slightly bubbling sugar sauce. Add in the pecans and stir around for a few minutes. Transfer to a parchment-lined pan or plate. Sprinkle with salt and optionally some cayenne if you want a little kick. Let cool while you prepare the other ingredients.
2. In a small blender, combine the dressing ingredients and lightly blend until smooth. Taste and adjust for flavours as desired.
3. Add the spring mix/greens, shredded carrots, thinly sliced celery, green onions, apple, rotisserie chicken, feta cheese, and candied pecans in a large salad bowl. Add the dressing and lightly toss everything to combine. Enjoy!
